I’d like to mount some sort of LED on my dash to let me know when my headlights are on. Has anyone seen a kit for that? Should I just run a couple of wires from the headlight through the firewall?

That's the only way. The illumination will come on with the parks or headlights, so that won't tell you specifically if the headlights are on. There's no other place in the cabin to pick up a light signal, the wires to the headlights originate in the IPDM under the hood and don't run anywhere outside the engine box.
